The Fermentation Science Institute (FSI) at Southern Illinois University Carbondale (SIU) is a hub for all things related to fermentation.
SIU offers one of only seven bachelor’s degrees recognized by the Master Brewers Association of the Americas. Students at the FSI learn about the science behind fermentation, including the production and analysis of alcoholic beverages, fermented foods, and cheese. The state-of-the-art laboratories and facilities provide an ideal environment for hands-on learning in this fascinating field.
Created by SIU staff and students, The King Ale is a cream ale-style beer. This brew is designed by Saluki Brew Works, an offshoot of SIU’s Fermentation Science Institute, in partnership with Ravinia Brewing Co.
SIU’s brew, Time Traveler, is a dry-hopped Belgian ale. It was part of release No. 15 in the Lazy Dog Beer Club’s “Battle of the Brews” competition. The theme for this release was “Mad Science”, and Time Traveler combines Belgian super yeasts from the fifth century with New Zealand Nelson Sauvin hops from the 21st century.
Beyond beer, SIU’s fermentation program prepares students for careers in various biotechnology fields. These include winemaking, distilling, and the production of fermented foods such as yogurt, sourdough, kombucha, kimchi, sauerkraut, and cheese.
